MONIN Green Melon G&T

Ingredients:

• 10ml Le Fruit de MONIN Green Melon
• 5ml Lemon juice
• 30ml Gin
• 120ml Tonic

Green Melon Foam

• 50ml Le Fruit de MONIN Green Melon
• 400ml Jasmine tea
• 1g Xantham gum
• 2g Carboxylmethyl cellulose (CM2)
• 1 unit N2O charger

Preparation:

To build the drink:

1. In a chilled glass, combine Le Fruit de MONIN Green Melon, lemon juice, and gin.

2. Top with tonic water, then carefully layer the prepared green melon foam on top.

3. Garnish with mint, an edible flower, or melon balls as desired.

To prepare the Green Melon Foam:

1. Blend Le Fruit de MONIN Green Melon, cooled jasmine tea, xanthan gum, and CMC until smooth.

2. Transfer the mixture into an iSi whipper, charge with one N₂O cartridge, shake well, and chill for at least one hour.
